Alton Brown’s Perfect Chocolate Chip Cookies

Searching for the perfect chocolate chip cookie recipe seems like searching for the Holy Grail. But, I think I finally found it.

I’m an Alton Brown fan. His recipes just seem to make sense. I’ve been using a different Alton Brown chocolate chip recipe for awhile now, but I misplaced it and decided to try a slightly different recipe.

Holy crap. You know when you get a craving for chocolate chip cookies? This is exactly what you’re craving. These chocolate chip cookies are the real deal. No, they’re not exotic, they’re not crazy and fancy. They’re plain ol’, magically perfect chocolate chip cookies.

These cookies are crunchy on the outside, but are not hard. Upon coming out of the oven, they are the perfect consistency, soft and malleable but not too chewy. After a couple of hours in the cookie jar, they’re harder but can be broken in half without crumbling into a million tiny pieces.

Alton Brown’s Magically Perfect Chocolate Chip Cookies

Makes 2 dozen. You’ll Need:

1 stick unsalted butter

1 1/2 cups all-purpose flour

1/2 teaspoon kosher salt

t1/2 teaspoon baking soda

1/4 cup sugar

3/4 cup brown sugar

1 egg

1 tablespoon milk

1  teaspoon vanilla extract

1 cup semisweet chocolate chips


1. Preheat oven to 350.

2. Melt butter in the microwave or in a saucepan on the stove. In a large bowl, pour in melted butter and add both sugars. Stir until incorporated.

3. Add egg, vanilla and milk. Stir until incorporated.

4. In medium sized bowl, mix flour, salt and baking soda. Gradually pour into butter/sugar mixture in small increments until completely incorporated. If it will not mix, feel free to add more milk in tablespoon increments. Then, add chocolate chip cookies. I added a lot more than called for because hey, it’s chocolate.

5. Using a 2-tablespoon scoop, drop cookies onto cookie sheet sprayed with cooking spray. Place in oven for 18 minutes on the middle rack. Then, wait as long as you can bear to eat them!

    Hey Katie, Cravings? I know about those. A lot of my blog friends agree with you about Alton’s CCC recipe. I’ve not made them yet. Kinda landed on one I’m content with for the time being. They look great & I wish I had one out of your cookie jar right now.

    All I have to say is O.M.G. And THANK YOU for bringing this to my attention! The scoop makes monster-sized cookies that are thick and delish.

    1 1/2 cups of semi-sweet chocolate morsels and chunks = Chocolate chip heaven 🙂
