Funfetti Rice Krispie Treats — recipe adapted from Lovin' From the Oven.

My two younger sisters are absolutely obsessed with funfetti. They’re on this kick where they like to put it in all sorts of dishes besides cake. And I mean, why the heck not? It’s colorful, it’s delicious, it’s fun. Fetti. You get it.

These are insanely easy to make and spice up the tried-and-true Rice Krispie Treats. We had a bunch of the cereal leftover from Scotcheroos, so it was only natural to throw in some marshmallows, an insane amount of sprinkles and watch the pan disappear in less than 20 minutes.

Ingredients

  • 4 T melted butter
  • 10 oz. bag mini marshmallows
  • 3/4 cup Funfetti Cake Mix (We used the Betty Crocker brand)
  • 6 cups Rice Krispies cereal (or generic brand)
  • A ton of multi-colored chocolate sprinkles (6 T, if you wanna be exact)

Directions

  1. Combine butter and marshmallows in large bowl and melt in microwave in 30-second increments until completely combined and melted. Don’t over-melt — should only take approximately 1:30.
  2. Add cake mix and stir into marshmallow mix until incorporated.
  3. Stir in cereal and half of the sprinkles and mix (with some muscle!) until all the cereal is covered in marshmallow gooey goodness.
  4. Press into 9×13 dish (or 9×9 dish, if you want tall treats) and top with the rest of the sprinkles (I was heavy handed with the sprinkles, but no one’s complaining). Serve and enjoy!

    Hi,

I’m doing a round-up post on Spoonful (Disney’s cooking and craft blog) about funfetti recipes. Could I include yours? I’d use one photo with credit and link back to your site for the full recipe. Please let me know if that’d be okay.

    Thanks,
    Janssen
